There are certain nuances when sharpening ceramic and stainless steel knives. Before sharpening a knife, the blade is properly prepared. The master carefully washes and dries the knife, checks the degree of bluntness of the edge. Then he selects an abrasive material for sharpening with a suitable grain size. For example, for steel knives, the optimum grit size is 200-800 grit.
